Sweet Potato Pie

Ingredients:

For the Pie Crust:

• 1 unbaked 9-inch pie crust (store-bought or homemade)

For the Filling:

• 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

• 1/2 cup unsalted butter, melted

• 1 cup granulated sugar

• 1/2 cup brown sugar

• 1/2 cup milk or evaporated milk

• 2 large eggs

• 1 teaspoon vanilla extract

• 1/2 teaspoon ground cinnamon

• 1/4 teaspoon ground nutmeg

• 1/4 teaspoon salt

Instructions:

1. Prepare the Sweet Potatoes: Peel and cut the sweet potatoes into chunks. Boil them in a pot of water until tender, about 15-20 minutes. Drain and mash until smooth. Let the sweet potatoes cool slightly.

2. Preheat the Oven: Preheat your oven to 350°F (175°C).

3. Make the Filling: In a large mixing bowl, combine the mashed sweet potatoes, melted butter, granulated sugar, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth and creamy.

4. Fill the Crust: Pour the sweet potato mixture into the unbaked pie crust, smoothing the top.

5. Bake: Place the pie on a baking sheet and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The filling should be set but slightly jiggly in the center.

6. Cool and Serve: Allow the pie to cool to room temperature before slicing. Serve with whipped cream or a scoop of vanilla ice cream, if desired.
